Polish beets and spinach

3-4 beets
2 cloves of garlic
1-2 teaspoons of vinegar
2-3 teaspoons of sour cream (more if you want it more creamy)
salt and pepper to taste.

I buy my beets fresh and boil them until they are tender. After this I peal the skin and puree them and place in a pan. I add some vinegar, salt, paper and the garlic (which is cut into small small pieces), cook for about 5 minutes and add the sour cream. Yummy and healthy!

Same with spinach. But I buy mine frozen.

I cook it for a while (about 1/2 of a bag) and puree it. Follow the same directions as for the beets.
